The passion and knowledge received from internships and work experiences at Champagne producers, led us to experiment and transfer their vinification and fermentation methods to our grapes. The collaborative relationship between our Winemaker Lamberto Tosi and his friend Oenologist and Champagne producer Julian Gout graduated from the faculty of sciences of Reims-Champagne allowed us to realize our classic methods. Fruit of twenty-four months of maturation in the cellars here is the our Classic Method. Made from grapes harvested by hand the third week of August.

EMOTIONAL DEGUSTATIVE DESCRIPTION

Intense color and beautiful clarity. Intense and delicate perlage. The nose is very fragrant and the fruits are well present in the wine, round and well balanced in the mouth. PRODUCTION AREA

Grapes from the Colline Lucchesi. The area of Lucca is very suitable for the cultivation of grapes and for its fine wines.

PRODUCTION METHOD

PHASE 1

Grapes from the Colline Lucchesi with the aim of getting the most out of our grapes, the harvest is exclusively manual the third week of August. The grapes transported in small baskets to the cellar are gently pressed and placed immediately in the couves.

PHASE 2

The alcoholic fermentation takes place in thermoregulated stainless steel containers, at 16 ° for 10/12 days and the refinement continues in steel for 6 months for the pinot noir and in new and second passage barriques for 6 months for chardonnay. At the beginning of March the assemblage and the mis en bouteille for the sparkling wine take place thanks to the addition of selected yeasts from the Champagne Enological Institute of Epernay. The bottles are left to rest in our cellars for 24 months. Manually with the help of the pupitres, the yeasts then slowly descend along the neck of the bottle waiting for the degorgement.

PHASE 3

Once degorged, liqueur d'expedition is added, mainly made with white chardonnay wine also matured in barrique, without the addition of sugars and above all without the addition of further sulphites, to obtain our classic Pas dosé method, with a very low content of sulphites. The "Future Secret of Cheine" continues the refinement in bottle on yeasts for 30 months, disgorgement October 2018. Pas dosé.
