PRODUCTION AREA

Grapes from the Colline Lucchesi. The area of Lucca is very suitable for the cultivation of grapes and for its fine wines.

PRODUCTION METHOD

PHASE 1

Grapes from the Colline Lucchesi with the aim of getting the most out of our grapes, the harvest is exclusively manual the third week of August. The grapes transported in small baskets to the cellar are gently pressed and placed immediately in the couves.

PHASE 2

Fruit of twenty-four months of maturation in the cellars here is the first Classic Method of the coasts of Tuscany. Alcoholic fermentation takes place in thermoregulated stainless steel containers, at 16 ° for 10/12 days and the aging continues in steel for 6 months. At the beginning of March, the mis en bouteille takes place for the sparkling process thanks to the addition of selected yeasts from the Epernay Champagne Oenological Institute. The bottles are left to rest in our cellars for 20 months. Manually with the help of the pupitres, the yeasts then slowly descend along the neck of the bottle waiting for the degorgement.

PHASE 3

Once degorged we add the expedition liquer made with white chardonnay wine, without further addition of sugar, and above all without the addition of sulphites, to obtain our classic Pas Dosé method, and with very low sulphite contents. The "Secret" continues the refinement in the bottle for another 3/4 months before marketing.
